Mallaluka was established on a 40 acre (16.2 hectare) parcel of land located on the Yass Plains, considered to be amongst the best agricultural land in the Yass Valley. The site was chosen specifically to establish a vineyard. It is in the lee of a ridge, slopes gently to the northeast, with plenty of cold air drainage. It has proven to be a virtually frost-free site in the growing season. The soil is a sandy clay-loam over decomposed granite.
The first vintage was harvested in 2008 and the wines from that year won a number of medals at wine shows, including a gold medal for the 2008 Shiraz at the NSW Small Winemakers Wine Show in 2012. The vineyard produces approximately 15 tonnes of high quality fruit each year, depending on seasonal conditions.

The main homestead is based on a Penleigh Boyd concept and is designed to be solar passive. It is north facing with French doors and windows along the north wall. It is brick veneer, built on an insulated concrete slab with insulated walls, ceilings and roof. The house is 240 square metres and consists of: three double bedrooms (each with built-in robes), two bathrooms and separate toilets, a large kitchen/dining/lounge room (double glazed), second lounge room, study, mud room/laundry and entry foyer. There is also a 71 square metre, 3 bay carport under the same roof.

Winemaking commenced in a small shed the size of a double garage (48 square metres) in 2008 but this rapidly proved to be inadequate. The current winery was built in 2009 in time for the 2010 vintage. It was built to process 25-30 tonnes per annum but has been used for larger quantities. It is 180 square metres enclosed (and fully insulated) plus a 45 square metre awning to the north. It sits on a concrete slab with drainage in the centre. It is airconditioned and has 10 amp, 15 amp and 3-phase power. There is also a machinery/tool shed of 81 sqm that houses the two tractors and other machinery.

Normal winery production is approx 30-35 tonnes producing 24-28,000 litres (2,500-3,000 cases) per annum.
Potential to treble the size of the vineyard and be entirely self-sufficient in fruit.
